In 2018, we distilled a reproduction of the oldest absinthe recipe in the world – Dubied Père et Fils. It set off a wave of enthusiasm around the world, and we decided to continue working with that huge responsibility. We’ve taken the original recipe and invented a base that Major Dubied didn’t have time to use.

For the last three years I have been intensively involved in tasting grower Champagnes, which I have quite fallen for. So in 2019, I purchased a pomace from a Grand Cru grower using the Chardonnay variety, a blanc de blancs. These are the leftover pressed grapes that still have plenty of aromatics and sugar left in them. In Italy, grappa is distilled from fermented pomace, in France Marc.
And what better way to celebrate the beauty of the oldest absinthe than with champagne, right?
This is not Dubied captures the magic of Dubied’s recipe and colouring technique, but on a base that Dubied didn’t have time to use.
It’s not Dubied, but it is Dubied. Same, but different.
